Making Southern Classics Healthier

If you bake them, of course! Get some great looking green tomatoes, coat them with a Greek Yogurt and Panko crumb mixture, and put them in the oven. Not only does it help you to reduce the fattiness from the frying oil, but if you do it right, it can end up being a lot crunchier than what you’d find in a standard fried green tomato. How awesome is that?
